The symbol for "therefore" is an upright  isosceles triangle or pyramid - the bottom should be level with the ground.  The symbol shown in this video looks more like "greater than" symbol.

My ASL book tells me the sign "therefore", signed with three dots in the air, is used in the mathematical context. It can be used in other types of sentences?

The sign comes from the symbol used...

In mathematical proof, the therefore sign (∴) is sometimes placed before a logical consequence, such as the conclusion of a syllogism. The symbol consists of three dots placed in an upright triangle and is read therefore

 

It can be used in other types of sentences where the word THEREFORE is used also.
