In the Deep South (where we know about our shrimp), we sign it with the X-hand 'crooking and uncrooking,' but the palm is down and we start at the non-dominant side and move toward the dominant side. FYI, shrimp swim "backward" and crawfish crawl/walk "backward." (So if you enter a crawfish in a race, which can happen in the Deep South), be sure to put it down with its tail facing the finish line.) (And, BTW, crabs walk sideways.)
