I noticed that the description also states that it is the left hand that does the primary motion. I've always wondered... does it matter which hand performs a specific motion in a sign?

I am not Deaf, but I was instructed to "catch the fly" with my right hand. Most of this guy's videos are right handed, but I have seen a few left-handed videos here.
Unless it's a sign for a direction like "East" or "West," it doesn't matter which hand does the motion, but generally speaking it is considered bad to switch which hand is the dominant hand while signing.
As an aside, I was taught that the still hand is a palm-down S, but I doubt S or OPEN hand makes any difference in this case.
