Two different teachers have shown me (each) the following two signs for CARROT - 1) non-dominant hand in a 1-shape, pointing roughly forward while the A-shaped dominant hand rubs forward and back against it, representing a peeling carrot, and 2) a Bugs Bunny-like motion of eating a carrot, dominant hand A-shaped and to the side, moving towards a chewing mouth.  Both are also featured in Beginning ASL featuring the Family Bravo.  Why the discrepancy?

Yes, I've seen both of those versions out there. It's not a discrepancy as much as simply variations. There are probably more. If you're concerned which one to use I'd spell the word first then use the sign. Your Deaf client, friend, co-worker will probably tell you which variation they use. That way you are covered.   Happy Signing!
