Why does his sign not match the description, he uses only dh and not left when it says both hands to be used .

Hey Patti! I've seen that sign performed using both hands online and in class, but whenever I associate with my Deaf friends and other Deaf events, it's almost always signed with one hand. It's just an easier and abbreviated way to sign it, with one hand, as opposed to two.

Just my .02 worth! :)  It may also differ depending on location (regional signs) and such, I don't know.

I think you were referring to the description of the 2nd version (ASL 2) which does use both hands. The first version is the one you will probably see most often ( as Jason says) and that only uses one hand.
